"There are a few rules you should follow if you want to be happy at bistros.

First, be humble. In a bistro one doesn't complain. At Lasserre the guest is always right (even when he is wrong). At a real bistro, only the patron is always right.

Second, don't ask for anything. In some bistros, theydon't bother to write a menu. They may bring you something, and you eat it, or else.

Third, no praise. The patron knows his is the best place on earth; he doesn't need you to confirm it. At a famous restaurant they are always glad when you compliment them. Not at a true bistro.

They know they are good."
