Second, don't ask for anything. In some bistros, theydon't bother to write a menu. They may bring you something, and you eat it, or else.
Third, no praise. The patron knows his is the best place on earth; he doesn't need you to confirm it. At a famous restaurant they are always glad when you compliment them. Not at a true bistro.
